     Clam Chowder

Ingredients
1/2 package of bacon, slice slices
1 medium chopped onion
2 celery stalks, chopped
1/2 cup of white wine (if its good to drink, then its good to cook with)
1 cup of light cream
1 cup of milk
2 - 5 oz cans of clam meat
1 bay leaf
1 tsp of thyme
 
1 cup of grated potato
1 can of unsweetened evaporated milk
1/4 cup of chopped parsley
salt and pepper to taste

Instructions
In a large soup pan, brown the sliced bacon bits. Add onion and celery and saute until tender. Add wine, cream, milk and juice from the clams. Add bay leaf, thyme, and grated potato; bring to a slow simmer, then simmer for 15 mins. Add clam meat, evaporated milk and parsley and heat through, season with salt and pepper.
Serving Suggestions
Serve immedately with your favourite biscuits.
