     Spinich Soufle'

Ingredients
1 lb cottage cheese - can use low fat
1 pkg frozen spinich, thawed and squeezed dry
4 eggs, beaten
1 bag shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 stick butter, melted - can use light butter
3 T flour
 

Instructions
Combine first five ingredients in 8x8 pan Mix flour into melted butter and stir into mixture. Bake 45 to 50 min. at 350. Can be prepared the night ahead and baked the day to be served.
