     Raisin Pie

Ingredients
1 prepared pastry shell (enough to include crust top)
FILLING
1 cup brown sugar
2 tablespoons cornstarch
2 cups well washed seedless raisins
1 cup boiling water
1/2 lemon
milk to brush pastry
 

Instructions
Preheat oven 375F
In sauce pan, mix together; brown sugar, cornstarch, raisins and boiling water. Boil slowly until mixture bubbles. Remove from heat and add a splash of lemon.
Pour mixture into a prepared raw pastry, cover with pastry top and baste milk on top of crust and sprinkle with sugar, cut vent holes and bake for 15 minutes, reduce heat to 350F and continue baking until crust is golden brown and the bottom crust slides around in the pan when shook.
