Bring meat to ROOM TEMPERATURE. Make small, deep slits into meat and stuff garlic slivers into holes. Season with salt and pepper. Heat oven to 400 degrees. On broiler pan roast meat exactly 1 hour. Shut oven off. DO NOT OPEN OVEN. Meat may sit in oven for two to six hours. Thirty min before serving, turn oven on to 375 degrees for thirty min.
