Peel plastic off Mozzarella string cheese sticks. Cut into 1/4 or 1/2 inch rounds. (Lay stick flat, slice like you would salami).
Heat olive oil in pan (less is more, but +more is merrier+). Place mozzarella rounds in pan. Quickly sprinkle salt, pepper, garlic powder (all optional) on little cheese rounds. Flip #1 w/ spatula once to coat.
Sprinkle Panko flakes (1 tbsp. - 1/2 cup, adjust according to number of string cheese sticks used). Flip #2, make sure both sides are coated w/ flakes.
Let saute until golden brown, then Flip #3. Let the other side bronze & glow. Transfer to paper towel (w/ low-fat, there is barely any oil to pick up)!
Gourmet tip: Would be great sauteed w/ fresh garlic & tossed w/ sauteed or +fried+ calamari!
