     Peking Duck, Home Style

Ingredients
2.5-3 kg/5-6 pound roasting duck
3 tsp. salt
1/2 cup vodka
4 T honey or maltose or maple syrup (my choice)
2 cups hot water (I omitted the dilution)
 

Instructions
Remove fat from inside cavity of duck and carefully slice off tail and oil glands on either side of tail. Rinse duck inside and out and dry with paper towels.
Rub inside cavity with salt. Put duck on large tray and spoon vodka over, rubbing all over duck. Leave 4 hours, turning from time to time so all skin comes in contact with vodka.
Dissolve honey, maltose or maple syrup in hot water and brush over duck. Hang to dry for 4-6 hours in front of window or fan to speed process. ( I applied maple syrup 3X)
Roast 400 degrees for 30 minutes on rack, well above roasting pan. Line pan with foil to produce more reflective heat and pour 1 inch of water in pan. Turn heat down to 350 degrees for 1 1/2 hours or until skin is golden brown. Put foil on wing tips and/or legs if browning too quickly.
Serving Suggestions
Mandarin pancakes (I used crepe recipe with less water), spring onion brushes, hoi sin sauce
