Wisk together mashed potatoes and egg. Add onion and mix well.
Add salt and pepper.

Heat oil in skillet (about 3 T) over medium-high heat. Dollop
heaping tablespoons of batter onto heated surface. Flatten each
dollop slightly with spoon to create pancakes.

|
Cooking time is about a minute per side. They should be golden
brown on each side, so cook with eyes not time.
|
|
|
If cooking multiple batches, transfer completed cakes to a paper
lined microwave safe plate. If needed when all the cakes are done,
microwave for 20 seconds to assure they are warm.
