     Sushi Rice

Ingredients
2 1/2 cups uncooked rice - 5cm piece dried kelp
Seasoning
4 T rice vinegar
3 T sugar
2 1/2 tsp salt
2 T mirin
 

Instructions
Cook rice with kelp. Heat seasoning ingredients until sugar is completely dissolved. Cool completely before adding to rice.
Spread rice on a large dish. Pour cooled seasoning ingredients over rice and mix gently but thoroughly.
Fan rice to cool it quickly to room temperature.
To make mounds of rice for nigiri-zushi, moisten hands with cold water mixed with an equal amount of mild vinegar.
