     Oven Roasted Vegetables

Ingredients
1 medium zucchini
1 medium summer squash
1 medium red bell pepper
1 medium yellow bell pepper
1 pound fresh asparagus
1 red onion
3 T olive oil
1 tsp. salt
1/2 tsp. freshly ground black pepper
 

Instructions
Heat oven to 450 degrees.
Toss all vegetables with olive oil, salt and pepper to coat.
Spread in single layer in a pan.
Roast 30 minute, stirring occasionally until vegetables are lightly browned and tender. ( I like to keep vegetables a little crunchy)
