     Pinapple upsidedown cake

1 pinapple 1/2 cut in small pices 1/2 cut in circles
2 teas. baking powder
3/4 teas. baking soda
1/2 teas. salt
2 teas. vanilla
2 1/4 cups flour
1 cup sugar
1/2 cup brown sugar
1/4 cup coconut milk (I use a little extra)
230 g butter
1/2 cup coconut
2 eggs

Mix all the dry ingredients, add the eggs, coconut milk og 1/2 the butter plus the small pices of pinapple.
Place the pinapple circles on the bottom of your cakedish or muffin dish (in witch case you cut the pinapple cirkels in smaller pices) cut the last half of the butter in small pices and spread them on the bottom of the pan ass well(I normally dont use all the butter). Sprinkel brown sugar on top, enough to cover. Pour the batter in and bake the cake til the consistency is firm. (I normally bake it at 180 C and keep an eye on it)
