     Pepper Steak with Rice

Ingredients
3 c. hot cooked rice
1 lb lean round beef steak cut into 1/2 inch thick
1 T paprika
2 T margarine
2 cloves minced garlic
1 1/2 c beef broth
1 c sliced green onions
2 green peppers cut into strips
2 T cornstarch
 
2 lg tomatoes cut in 8ths

Instructions
Pound steak to 1/4 in thickness. Cut into 1/4 in wide strips. Sprinkle with paprika. Brown meat in butter. Add garlic and broth. Cover and simmer 30 min.
Stir in onions and greed peppers. Cover and cook 5 min. Blend cornstarch, H2O, and soy sauce. Stir into meat mixture.
Cook stirring, until clear and thickened - about 2 min. Add tomatoes, stir gently. Serve over rice.
