     Zucchini Soup

Ingredients
3 lbs. zucchini
2 T salt
1 t onion powder
1 t garlic powder
1/8 t white pepper
2 (10.75 oz) chicken broth
1/2 c water
1.5 c. half and half
S&P
 
chopped chives

Instructions
Slice zucchini into 1 in pieces. Bring to boil in sauce pan with S and P, onion pwder, garlic pwder, chicken broth and water. Cook over moderate heat until tender, about 10 min. Place 1/3 of zucchini slices and broth at a time into food processor. Blend until smooth. Place in a clean saucepan. Stire in 1/2 and 1/2. Season to taste with salt and pepper. Stir over mod heat, until heated through. Garnish with chives.
