     Cornbread mini-muffins w/ honey butter

Ingredients
2 C cornmeal- self rising
2 C buttermilk
2 eggs
1/4 C butter
1/4 C honey
 

Instructions
Preheat oven to 425 degrees. Mix egg and buttermilk together in a bowl and allow to come to room temperature, this helps the rising process.
Add cornmeal and mix, let it sit until you bubbles in the batter. Grease a muffin tin and pour in batter. Bake for 12-15 min.
Mix honey and butter, use as spread for mini-muffins.
