4 Canadian bacon slices
2 tsp kosher salt
2 tbsp distilled white vinegar
Hollandaise Sauce:
2 egg yolks at room temperature
2 tsp heavy cream at room temperature
1/4 tsp kosher salt, plus more as needed
Dash of cayenne pepper
1/2 c + 2 tbsp unsalted butter, melted
 
2 tsp fresh lemon juice at room temp
1 tsp white wine vinegar
Sugar
2 English Muffins
4 eggs
Freshly ground pepper
Chopped fresh tarragon or dill (garnish)
