     Tzatziki (Cucumbur/Yogurt Dip)

Ingredients
16 oz Greek Yogurt
2 gloves of garlic, minced
1/2 LARGE diced cucumber (English or Kirby Cucumber)
1 TBLS olive oil
2 tsp. lemon juice
Dill to taste
 

Instructions
Greek yogurt is essentially yogurt with all the whey drained out. You can do this yourself by buying a tub of plain yogurt and wrapping it in cheese cloth, placing it in a strainer over another bowl and throwing it in the fridge overnight -OR- you can buy Greek yogurt at most health food stores. Peel cucumber.
Mix oil and lemon juice well and then add the yogurt to it. Make sure it mixes completely with the oil.
Add and mix other ingredients. Chill.
NOTE - English or Kirby cucs work the best because they are seedless. If you can't find either use a regular cucumber but peel and seed it first.
