Ingredients
1 lb yukon potatos peeled and quartered
1/2 tp salt
2 tbsp butter
1 tbsp olive oil
1 bunch green onions
1/2 cup salsa
1 lb cooked salmon
2 tbsp chopped tarragon
2 tbsp chopped dill
 

Instructions
simmer potatoes with salt for 10-12 minutes, cool and dice
butter an olive oil to sautee pan at med high heat, when butter foam and then stops foaming add potatoes. add salt and pepper. cookk 6-7 min
reduce heat to medium and add onions and salsa. mix in and pat down and cook 5 minutes
add salmon and herbs. mix and press down. turn it over as it cooks so that it can get crusty several times over medium heat
Serving Suggestions
consider topping with poached egg
