     Vegetable Pasta Soup

2 T. olive oil
1 c. diced carrots
1 c. minced celery
1 t. salt
1 t. oregano
1/4t. pepper
1 t. basil
1 c. cubed zucchini
1 c. chopped onion
2 16 oz. cans tomatoes
3 c. water
1 16 oz. can great northern beans, drained
3/4c. uncooked pasta
1/4c. chopped fresh parsley
2 potatoes, chopped
1 lb. hamburger

In a soup kettle, saute onions in olive oil until they are soft, about 5 min. Then brown hamburger.
Add carrot, celery, salt, oregano, pepper, and basil. Cover and cook over low heat for 5 minutes.
Stir in zucchini, tomatoes, water, and beans. Cover and simmer gently for 30 minutes.
Heat soup to a boil. Add pasta and boil until tender, about 10 minutes. Last, stir in parsley and serve.
