     Orzo with Spinach and Zucchini

Ingredients
1/2 Large Red Onion, chopped
Garlic 2 large cloves, chopped
Canola Oil 2 Tbsps
Tomatos 2 medium, chopped
Zucchini 3 medium, sliced thinly
Spinach, 8 oz fresh
Orzo Pasta 6 ounces
Vegetable Broth 64 ounces
 

Instructions
Add oil to large soup pot and add chopped onion. Cook on high until onion starts to soften. Lower heat to medium and add chopped tomatos and garlic. Let cook for about 5 minutes.
Once the onions,tomatoes and garlic have cooked down add the vegetable broth. Let broth come to a boil and add the zucchini. Let cook covered for about five minutes.
Add the orzo and spinach and allow to simmer until the orzo is al dente. This takes about 9-11 minutes.
Serve soup with whole grain bread or also great with tortillas. To jazz up the flavor add the juice of half a small lemon to each bowl.
Serving Suggestions
This is a light and comforting soup for when you do not want a heavy meal.
