     Southwest Chicken

Ingredients
4 chicken breast halves
1 tbls veg oil
10 oz can diced tomatoes with green chiles
can of black beans
can of corn
chili powder
cumin
pinch of sugar
onion
 
garlic

Instructions
Heat oil in skillet and saute chopped onion and garlic. Cut chicken into pieces and sprinkle with chili powder. Add chicken to skillet and brown.
Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve. If it is too spicy, add some sugar or sour cream. Serve with brown rice.
