     Beef - Carmelized-Onion Pot Roast

Ingredients
1 boneless beef roast, 4 lb.
1 Tbs. olive or vegetable oil
1 tsp. salt
1/2 tsp. pepper
6 medium onions, sliced
1 1/2 cups beef broth
3/4 cup beer (regular or nonalcoholic)
2 Tbs. packed brown sugar
3 Tbs. Dijon mustard
 
2 Tbs. cider vinegar

Instructions
Trim excess fat from beef. Heat oil in 10 inch skillet and brown on all sides. Sprinkle with salt and pepper
Place onions in a 3 1/2 to 6 qt. slow cooker. Place beef on onions.
Mix remaining ingredients, pour over beef & onions. Cover and cook on low heat 8 to 10 hours or on high 5 to 6 hours or until beef is tender.
Leftover idea. Cut up to 2 cups of the beef and onions and add to your favorite spaghetti sauce.
Serving Suggestions
Mahsed potatoes, vegetable or salad.
