Rinse beans. Place beans and 6-8 cups cold water(8 cups is 2 qts.) in 5 qt. pot.
Soak over night or bring to a boil, boil 2 min. then let soak 1 hour.
Do not change water - cook in the water they were soaked in.
Add ham, onions, seasonings and bay leaves. Cover and simmer until beans are tender. This takes several hours, aproximately 4 to 6.
After cooked, remove the ham bone or hocks. Mash the beans slightly leaving about 1/2 to 2/3 whole.
Dice or shread the ham and return to the soup.
This recipe would probably work will in a crock pot on high for 4-6 hours or low 8-10 placing all ingredients in after soaking the beans.
