     Camelized Onions

Ingredients
2T. extra virgin olive oil
1 3/4lbs. small red onions, haved lengthwise and cut into 1/3in, - thick wedges
1/2 t. sugar
3T. balsamic vinegar
2T. water
salt and pepper to taste
 

Instructions
Heat 2T. oil over medium-high heat until hot and just starting to smoke.
Reduce heat to medium; add onions, and cook, stirring occasionally until onions are tender (about 3 min).
Transfer to a bowl and season with salt and pepper.
Serving Suggestions
With steak or on mashed potatoes
