     Tomato Sammidges

Ingredients
3-4 large tomatoes, cut horizontally into slices that are 1/2 inch thick
1 5.2 ounce packageof Garlic & Herb Boursin cheese
8 slices thick bacon cooked unitl crisp and crumbled
2 - 4 tablespponfuls olive oil and butter
4 large eggs, lightly beaten with small amount of milk
Italian seasoned panko mixed with Italian bread crumbs half and half
Salt and Pepper
Fresh Basil cut into small pieces
 

Instructions
Place the tomato slices bewteen paper towels for 15 minutes to drain any excess moisture. Make matching pairs of similair size slices.
Spread a thick layer of cheese on one side of each tomato slice. Crumble the bacon and divide evenly over the cheese layer. Add Basil over the bacon and cheese layer. Put the halves together to form sandwiches.
Have the egg mixture and the panko/bread crumbs with salt and pepper to taste in separate bowls. Place the sandwich first into the panko/bread crumbs and then into the egg mixture and then in the panko/bread crumbs shaking off excess. (I find it easier to do this with my hands)
Place in refigerator to firm up sandwiches. Cook in oil/butter mixture for 2-3 minutes till golden brown. Carefully turn over and cook for additional 2-3 minutes. Serve warm.
