     Gingered Zucchini Bread

Ingredients
2 c flour
2/3 c sugar (brown, turbinado, white or combo)
1-1/2 t baking powder
1/2 t salt
1/2 t baking soda
1/4 t nutmeg
1 c grated zucchini
2/3 vegetable oil
2 eggs
 
1 t vanilla
1/3 c diced, candied ginger
Instructions
Beat sugar and oil. Add eggs one at a time. Then beat in vanilla.
Combine dry ingredients and add to mixture. Stir in zucchini and ginger.
Bake at 350 in bread pan until done.
