Preheat oven 375º Scoop out pulp from zucchini, place scooped out zucchini on baking sheet, set aside. Coarsely chop remaining zucchini and pulp.
Melt butter in skillet over medium high heat. Saute zucchini and chopped onion, stirring occasionally until vegetables are tender.
Add remaining ingredients, except for the cheese and saute 1 minute. Cool slightly, then spoon into zucchini boats. Top with cheese. Bake 30 minutes or until tender.
