Apple Streusel Pie

Ingredients
-
pie crust
-
6 tart apples
-
1T lemon juice
-
1/2 t cinnamon
-
1/4 t allspice
-
1/3 - 1/2 c sugar to taste -- I like a tart pie
-
1/2 c quick oats
-
1/2 c flour
-
1/2 - 3/4 c sugar, brown sugar or turbinado sugar or combo

1/2 c butter
-
1 t cinnamon

Instructions
Peel and core apples. Slice into bowl. Toss with lemon juice and spices. Pour into prepared pie crust.
Mix streusel ingredients until crumbly. Pour on top of apples. Bake pie at 350 for 30-40 minutes until bubbling and topping is crisp.
I adapt this all the time. You can add candied ginger to the apples along with cranberries. The topping can be made with all flour, although I prefer the oats. You can also use the topping for cherry, blueberry or peach pie. For cherry use 1/4 t almond flavor instead of the lemon juice, and leave out the allspice. For peach pie substitute nutmeg for the allspice.
For fruit pies other than apple, buy instant tapioca and add the amount of tapioca specified on the box to the fruit. Tapioca will help thicken the juices without muddying the flavor like flour will.
