     Super Skinny Sloppy ( Joe ) Salad

  Ice cold diet cola, Zinfandel, Syrah or Shiraz

1 lb. Super Lean ground beef*
*Ex.: 96% lean, 4% fat
*Ex.: Extra Lean ground sirloin
2 cloves fresh garlic - chopped
2 fresh tomatoes
2 tsp. extra virgin olive oil
Ketchup (or tomato paste w/ tbsp. sugar)
Low-fat mayo
Salt, pepper, garlic powder,chili powder
Cayenne pepper -OR- Taco Seasoning
Optional: splash of hot sauce - Tabasco
or Frank's, or...
Low-fat shredded cheddar/Mexican cheeses
Fresh lettuce, rinsed & chopped/sliced
-or- full lettuce leaves to use as wraps

Rinse super lean hamburger under running water, blot well with paper towels. Sprinkle with sea salt on all sides. Heat olive oil in frying pan, sautee chopped garlic.
Drop hamburger in semi-sizzling pan. Sprinkle w/ pepper, garlic & chili powders, cayenne pepper (or Taco Seasoning). Break up hamburger with spatula, let brown. Cut tomato, rinse out juicy seeds. Chop.
While meat is browning, mix "sloppy sauce" in bowl. Whip approx. 1/4 c. low-fat mayo with 1/2 c. ketchup (add more if necess). Add splash of hot sauce, chili & garlic powders and cayenne pepper (use sparingly). Whip it real good.
If super lean meat browns (no signs of red!), is semi-matte, not greasy: mix in sloppy sauce. Add tomato. If you see grease/oil, blot with paper towel and wipe pan. Stir sauce & tomato w/ meat over heat. Scoop over lettuce, sprinkle w/ grated cheese.
Serving Suggestions
Serve Super Skinny Sloppy Joe wrapped in lettuce.
