1/2 c. butter, softened

3 eggs

1/2 c. lemon yogurt
|

1 1/2 c. all-purpose flour

1/4 t. baking powder

1/8 t. baking soda

1 T. finely shredded lemon peel

2 T. lemon juice
|

2 T. poppy seed

Instructions |
|
|
Bring butter, eggs, and lemon yogurt to room temperature.
Combine flour, baking powder, and baking soda.
|

In a bowl stir butter, gradually add sugar, stirring until fluffy. Add
vanilla. Add eggs one at a time, beating and scraping bowl often.
|

Add flour mixture and yogurt to egg mixture, stirring. Add lemon
peel, lemon juice, and poppy seed to batter. Pour into muffin cups.
|
|
|
Bake on 350 degrees for 15 minutes. Cool
|
