     Summer squash ribbons with lemon and parmesan

Ingredients
1½ lbs summer squash and zucchini
2 tbs extra virgin olive oil
2 tbs fresh lemon juice
2 oz paremesan (3/4 cup) shaved
1/2 tsp salt
1/2 tsp pepper
 

Instructions
Cut the squash and zucchini into long thin strips using a vegatable peeler (discard seedy cores). Place in large bowl.
Add oil, lemon juice, parmesan, salt and pepper and toss gently.
