     Tuna Salad (Tempeh)

Ingredients
1 pound tempeh, quartered
1 1/4 cups vegan mayo
2/3 cup diced dill pickles
1/2 cup diced celery
1/4 cup diced red onion
2 Tbsp soy sauce
2 Tbsp minced parsley
1 Tbsp mustard
2 tsp apple cider vinegar
 
1/2 tsp minced garlic
black pepper

Instructions
Chop tempeh into 1/8 inch squares; place in steamer and steam for 10 mins.
Remove tempeh from steam; combine with remaining ingredients in large bowl; mix well. Refrigerate for 1 hour.
