     Collard Greens

Ingredients
1 Tbsp toasted sesame oil
2 Tbsp peeled/minced fresh ginger
2 cloves garlic, minced
1/4 tsp sea salt
1 1/2 tsp maple syrup
6 cups collards, cut into 1/2 inch strips
1 tsp soy sauce
1 tsp lemon juice
 

Instructions
Place oil/ginger/garlic/salt in skillet over med heat. Cook until browning; stirring frequently. Add maple syrup, cook for 1 minute.
Add collards and soy sauce; stir for 1 to 2 mins with tongs; remove from pan while still bright green. Transfer to bowl; add lemon juice.
