     Fajitas Bonitas

flour tortillas
2 Tbsp olive oil
2 large garlic cloves; minced
1 yellow onion, cut into half moon slices
1 red bell pepper; seeded/cut into 1/2 inch strips
1 green bell pepper; seeded/cut into 1/2 inch strips
2 Portobello mushrooms, cut into 1/2 inch strips (8 oz)
1 /2 cup corn
2 tsp cumin
1 tsp chile powder
1/4 tsp cayenne
1 tsp salt
1/2 tsp pepper
1 Tbsp soy sauce
2 cups thinly sliced lettuce
1 cup tomato; diced

Preheat oven to 200; place tortillas on baking tray and cover with moist towel ; let them heat gently while you make the rest of the meal.
Using large skillet or wok, saute olive oil/garlic/onion/red and green bell peppers/mushrooms over med heat for 5 mins or until peppers are bright/soft; stir occasionally; add corn/cumin/chile powder/cayenne/salt/pepper/soy sauce; cook 5 mins or until all veggies are cooked through.
Remove tortillas from oven; serve sauteed veggies/lettuce/tomatoes in separate bowls along with warm tortillas still under towel.
