     Creamy Chicken and Mushrooms

Ingredients
2 cup uncooked medium egg noodles
cooking spray
1 lb skinless boneless chicken breast cut into bite size pieces
1 tsp olive oil
1/2 cup chopped shallots
1 (8oz) pkg presliced mushrooms
1/2 cup dry white wine
1 cup fat free milk
2 tsp flour
 
1/3 cup (3 oz) spreadable cheese with garlic and herbs (alouette)
2 tbs chopped fresh parsley
1/4 tsp black pepper
freshly chopped parsely (optional)

Instructions
Cook pasta according to directions ommiting fat and salt.
While pasta cooks, heat a large non stick skillet with cooking spray over medium high heat. Add chicken saute 4 minutes or until done. Remove chicken from pan, set aside.
Heat oil in pan over medium high heat. Add shallots saute 1 minute. Add mushrooms saute 4 minutes. Add wine and cook for 3 minutes or until liguid almost evaporates.
Combine milk and flour in a small bowl, stir well with a whisk. Add milk mixture to pan, and cook 3 minutes or until slightly thick. Add chicken, cheese, parsley and pepper. Reduce heat and simmer for 3 minutes or until thoroughly heated. Serve over pasta with parsley if desired.
