     Basil and Oregano Pesto

Ingredients
2 cup lightly packed fresh basil leaves
1 cup freshly grated parmesan (3 oz)
1/4 cup olive oil, plus more for covering pesto
3 cloves garlic
2 tbs pine nuts
1 tbs finely chopped fresh oregano
salt and pepper to taste
 

Instructions
Blend all ingredients in food processor to a fine paste, stopping occasional to scrape down sides of work bowl. Can be prepares 1 week ahead. Transfer to container, cover with thin layer of olive oil and refrigerate. Pour oil from pesto when ready to use.
