     Molten Chocolate Cake

8 tsp plus 5 tbs sugar, divided
8 oz bittersweet chocolate, chopped
3/4 cup unsalted butter
3 large eggs
3 large egg yolks
1 tbs flour

Preheat oven to 425. Generously butter eight ramekins. Sprinkle inside of each with 1 tsp sugar.
Stir chocolate and butter in heavy saucepan over low heat until smooth. Remove from heat. Using electric mixer beat eggs, egg yolks, and 5 tbs sugar in a large bowl until pale yellow (8 min). Fold one third of warm chocolate mixture into egge mixture, then fold in reamining chocolate. Add flour and mix.
Divide evenly among ramekins (May be made up to 1 day in advance. To do so cover with plastic wrap and place in refrigerator. Bring to room temperature before cooking). Place ramekins on baking sheet. Bake for 11 to 13 min or until edges are puffed and cracked, but center moves when shaken. Cool 10 min.
Serving Suggestions
Can run knife around ramekin and invert cake or eat out of ramekin.
