Combine sauce ingredients in a sauce pan and boil for 3 minutes, set aside.
Heat cooking oil in a large frying pan to a high temperature. Roll chicken in cornstarch and then dip in beaten eggs. Fry in hot oi for 4-5 minutes over medium-high heat.
Combine cooked chicken and sauce and heat. Stir gently for 5-7 mins or until the sauce thickens.
