     Silken Chocolate Pie

Ingredients
1 cup semisweet chocolate chips
4 egg whites
1 tbs cocoa powder
1 tbs sugar
1 tbs milk
1 tsp vanilla
5 oz soft tofu
1/2 cup whipping cream (optional)
1 graham cracker crust
 

Instructions
Melt chocolate chips in a microwave or heavy saucepan. Set aside to cool slightly.
With an electric mixer on high, beat the egg whites until stiff. Place the bowl in the freezer for a few minutes to chill while preparing remaining pie filling.
In a blender or food processor, combine the cocoa, sugar, milk , vanilla and tofu. Puree until smooth. With the electric mixer on low speed, beat the tofu mixture into the melted chocolate until it is smooth and fluffy, about 3 min. Fold one third of egg whites into the chocolate mixture to loosen,then gently fold in remaining egg whites. Pour filling into pie crust and chill several hours or overnight.
Serving Suggestions
If desired, beat whipping cream and serve a dollop on each piece.
