     Blueberry Lemon Muffins

Ingredients
1½ cup all purpose flour
1/2 cup yellow cornmeal
1/2 cup sugar
1 ½ tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup blueberries
1 cup low fat butter milk
3 tbs butter or stick margarin, melted
 
1 tbs grated lemon rind
1 large eggs, lightly beaten
cooking spray
1 tbs sugar

Instructions
Preheat oven to 400 and spray 12 muffin cups.
Combine flour through salt in a medium bowl. Stir in blueberries; make a well in center of mixture. Combine buttermilk, butter, rind and egg; stir well with a whisk. Add to flour mixture; stir just until moist.
Spoon batter into muffin cups; sprinkle each muffin with sugar. Bake for 20 min or until a toothpick comes out clean. Remove from pan immediately and let cool.
