     New Hampshire Apple Bread

Ingredients
1/2 cup butter, softened
1 cup sugar
2 eggs
2 cup flour
1/2 tsp salt
1 tsp baking powder
2 tbs buttermilk
1 tart apple, unpeeled and coarsely chopped
1 tsp vanilla extract
 
1 cup chopped pecans

Instructions
Preheat oven to 350 and grease 9 x 15 inch loaf pan.
Cream butter and slowly add sugar in large mixing bowl. Beat until light and lemon colored. Beat eggs. In separate bowl, combine flour, salt, and baking powder. Add to the creamed mixture alternately with the buttermilk, beginning and ending with the dry ingredients. Stir in apple, pecans, and vanilla extract.
Pour into loaf pan. Bake 1 hr or until toothpick comes out clean. Cool 5 min before removing from pan and an additional 20 to 30 min before slicing.
