     Christmas Candy Cane Cookies

1 cup sugar
3/4 cup margarine or butter, softened
2 eggs
1 1/2 teaspoons almond extract
2 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon red food coloring
1/2 cup crushed peppermint candy
1/2 cup granulated sugar

Mix sugar, butter, eggs and almond extract. Stir in flour, baking powder and salt. Tint 1/2 dough w red food coloring. Cover and refridgerate at least one hour.
Heat oven to 350. Roll into 1 in. balls. Roll one each red and white into long snakelike rolls & twist together into candy cane shape and place on ungreased cookie sheet. Bake until set and very light brown, about 10 mins.
Crushing candy canes can be a bit of a chore. I put them into a double ziploc gallon bag and slam them with a meat pounder. Mix crushed candy and granulated sugar; immediately sprinkle over cookies. Allow cookies to cool completely before removing from cookie sheet.
Serving Suggestions
These can be wrapped pretty in treat bags as little gifts. I made them into pinwheel lollipops for my granddaughters birthday party.
