     Baked Artichoke Heart and Shrimp Omelet

Ingredients
6 eggs
1/2 t salt
1/8 t cayeene pepper
2 T olive oil
14 oz can artichoke hearts, drained and quartered
1 c cooked and peeled shrimp
1 T butter
3/4 c grated Jarlsberg cheese
1/4 c Parmesan cheese
 

Instructions
Beat eggs, salt, and cayenne pepper in a bowl. Heat oil in a skillet. Add artichokes and cook 2 to 3 minutes. Remove from heat and stir in shrimp.
Pour artichoke mixture into egg mixture and blend well.
Grease a 1 1/2 qt baking dish with butter. Pour mixture into dish. Sprinkle cheeses evenly over top. Bake at 400 in upper portion of oven for 15 to 20 minutes or until omemelt is frim and a knife inserted in the center comes out clean.
