     Creole Scramble

Ingredients
1 T olive oil
1/2 lb smoked sausge, thinly sliced
1/2 t finely chopped garlic
1/8 t cayenne pepper
3/4 c peeled and quartered fresh tomato
1/2 c thinly sliced bell pepper
1/3 cup cold water
1/8 t black pepper
6 eggs, lightly beaten
 

Instructions
Heat oil in a skillet. Add sausage and next 2 ingredients. Cook, stirring frequently, until sausage is lightly browned.
Add tomato and next 3 ingredients. Cook quickly until most of liquid evaporates but bell pepper is still crisp.
Add egg. Cook and stir over low heat until soft and cream. Serve immediately.
