     Crabmeat Bisque Cardinale

Ingredients
6 T butter
3 T grated onion
6 T ap flour
1/2 t dry mustard
4 cups half and half, warmed
2 cups whole milk, warmed
2 T ketchup
1 1/2 t tomato paste
2 t chopped fresh parsley
 
1 lb crabmeat
2 T dry sherry
2 T worcestershire
1/4 t hot sauce
2 t salt
white pepper to taste

Instructions
Melt butter in a pot. Add onion and saute 5 minutes. Stir in flour and cook 2 minutes.
Add mustard and mix well. Lower heat and whisk in half and half, milk, and ketchup.
In a small bowl, combine 1/4 c milk mixture and tomato paste. Stir until smooth.
Add tomato paste mixture, parsley, and remaining 6 ingredients to pot. Refrigerate overnight. Serve hot or cold.
