Layer cucumber, onion, and salt in a large bowl. Cover with cold water and let stand 2 hours. Drain well. In a large saucepan, combine vinegar and remaining 5 ingredients. Bring to a boil.
Add cucumber and onion and boil 10 minutes. Seal in sterile jars.
