     Cranberry Orange Nut Bread

Ingredients
1/2 c. orange juice mixed with
1/4 c. vegetable oil
Hot water to equal 3/4 cup
1 egg, slightly beaten
2 c. flour
1 c. sugar
1 1/2 t. baking powder
1/2 t.. baking soda
1/2 t. salt
 
1 c. frozen cranberries, coarsley chopped
1/2 c. chopped nuts
1 T. grated orange peel

Instructions
Preheat oven 350°.
Mix orange juice with vegetable oil and hot water to equal 3/4 cup. Add egg. Set aside.
In a large mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Add orange juice mixture. Stir until moistened. Stir in frozen cranberries, nuts and orange peel.
Pour into a greased loaf pan and bake 1 hour. Best when served the next day.
