     Italian Suasages and Peppers

Ingredients
2 lbs Italian Sausage (sweet or hot)
1 lb fresh sliced mushrooms
1 green pepper sliced and seeded
1 red pepper sliced and seeded
1 medium onion sliced
1 cup red wine
1 32 oz canned sliced or diced tomotoes
1 cup grated parmesan or romano cheese
Olive oil
 

Instructions
Place sausages in a skillet. Add about 1/4 inch of water and cover skillet and steam for about 10 minutes. Remove Sausages and rinse skillet out. Add a small amount of olive oil. cut sausage links into 2 inch pieces. Brown the meat then remove from skillet Hint- If you are using a combination of hot and sweet sausage, cut them into different sizes so you can distinguish them.
Add peppers to skillet (adding more olive oil if necessary). After 3 minutes, add onions and mushrooms. Saute until onions are transparent. Add the cup of red wine scraping pan as you stir
Add tomatoes and salt and pepper to taste. Add sausage back into skillet. Can serve quickly or let simmer for 15 minutes or so. Add the cheese, adjust for salt and pepper and serve
Serving Suggestions
serve with Italian bread or on thick pasta.
