     Tropical Grilled Sea Bass

Ingredients
2 T peanut butter
juice of 2 limes
2 T water
1 c light coconut milk
2 T soy sauce
1/2 t hot chili oil
1.2 c parsley, chopped
3 T mint leaves
2 lbs sea bass, cut into 4 steaks
 

Instructions
In a medium bowl, mix together peanut butter, lime juice and water until creamy. Add coconut milk and blend. Add soy sauce, chili oil, parsley, and mint. Place sea bass in a shallow baking dish. Pour marinade over fish, refrigerate, and marinate for 4 hours.
Lightly oil grate. Remove fish and reserve marinade. Grill fish over medium heat for 6 minutes on each side, or until cooked through.
In a small saucepan, bring reserved marinade to a boil and serve over sea bass.
