Ingredients
2 t canola oil
1 T grated fresh ginger
1 clove garlic, minced
1 1/2 t Thai red curry paste
1/2 t ground coriander
1/4 t ground cumin
1 1/2 c light coconut milk
1 1/2 T packed light brown sugar
1 T fish sauce (nam-pla)
 
1/4 t salt

Instructions
In a small saucepan, heat the oil over medium high heat. Add the ginger and garlic; cook until fragrant, 30 seconds.
Add the curry paste, coriander, and cumin; cook 30 seconds longer. Stir in the coconut milk, brown sugar, fish sauce, and salt; reduce the heat to medium and cook, stirring often, until the sauce just begins to simmer, 6-8 minutes. Remove from the heat.
