     Au Gratin Potatoes

Ingredients
6 medium baking potatoes
¼ cup butter
1 medium chopped onion
1 tablespoon all purpose flower
1 teaspoon salt
¼ seaspoon pepper
2 cups milk
2 cups shredded chedder
¼ cup dry bread crumbs
 
Paprika

Instructions
1. Heat oven to 375. 2. Clean the potatoes but don’t peel. 3. Cut Potatoes into slices (approx 1/8 inch. 4. Melt butter in sauce pan over meduim heat.
5. Cook onions in butter for 2 minutes, stir occasionaly. 6. Stir in flour, salt and pepper. 7. Cook and stir constantly until bubbly. Then remove from heat. 8. Stir in milk and 1½ cups of cheese. Heat to boiling, stiring constantly for 1 minute. 9. Spread potatoes in ungreased 1½ quart casserole and pour the cheese sauce on top.
10. Bake uncovered for hour. 11. Mix remaining cheese and the bread crumbs, sprinkle mixture over the potatoes. Sprinkle with paprika. 12. Bake uncovered for 20 minutes more or until top is brown and bubbly.
