Preheat oven to 400F. Grease 12 3 x 1 muffin cups or use muffin papers
In a large bowl beat oil and sugar with electic mixer for 2 minutes. Add eggs and vanilla, beat for 1 minute.
In another bowl stir together flour, baking soda, cinnamon, and salt. Add dry ingredients to oil mixture, stir just to combine. Stir in apples, raisins, and walnuts
Spoon batter into prepared muffin cups, bake for 20 to 25 minutes or until tester comes out clean. Cool for 5 minutes before removing from tin. Finish cooling on rack.
